Leg of Lamb

Get a 5-6 pound leg of lamb with the skin still on. Season with salt and pepper.

Place skin side down on a rack in a roasting pan.

Do NOT add water and do NOT cover.

Roast in slow oven (300 degrees) until a meat thermometer measures 180 degrees. Takes about 30-35 minutes per pound for roasting.
