1/4 c chopped onion
1/2 c vegetable oil
4 c water
4 T margarine
2 c rice
3 jalapenos
1 lb Velveeta
Combine onion, oil, water, margarine, and rice in a large pot. Add jalapenos to pot. Cover and simmer on medium heat until rice is tender (about 40 minutes).
Carefully remove peppers from rice. Deseed, chop, and put them back in the rice. Mix well.
Add cheese to pot and mix well.
